Gluten Free Pasta Made Two Ways

People often assume that gluten-free pasta dishes aren’t as tasty or appealing in terms of how they look. They naturally assume the healthier route is, the less yummy one. The truth, however, is far from it – here’s proof of yummy extraordinary gluten-free pasta dishes made from gluten-free pasta online bought from Italy.

Recipe for Creamy Sun-dried Tomato and Spicy Chicken Sausage Pasta

The list of ingredients are:

  • A Pound of gluten-free pasta – Rigate or Fusilli
  • Two teaspoons of extra virgin olive oil
  • Three-quarters a Pound of Spicy chicken sausages
  • Three tablespoons of olive oil
  • One yellow onion – finely chopped
  • A clove of garlic
  • Three tablespoons of sun-dried tomatoes – finely julienned
  • A cup of chicken broth
  • One-third cup of coconut cream
  • Some salt
  • A quarter cup of fresh basil leaves – finely julienned

The instructions are:

  • Take a large pot of salted water and bring it to a complete boil.
  • Now, add in the pasta and cook until al dente as per the instructions on the packaging. Once cooked to perfection drain and rinse with cold water and set the pasta aside. You can find this gluten-free pasta online on Italian gluten-free stores.
  • While the pasta is still cooking, heat a medium pan with two teaspoons of extra virgin olive oil and add the sausages.
  • Fry the sausages until they are crispy and golden on the outside, and completely cooked through on the inside. This should take about 5 to 6 minutes. Once done, slice the sausages.
  • Now take a large saucepan, keep it over medium heat, and add the olive oil. Once the oil is heated, add in the onions, garlic and the sun-dried tomatoes with a sprinkle of salt. Cook this mixture until it is soft and tender. It takes about 5 to 7 minutes.
  • At this juncture add in the chicken broth and simmer for another 2 minutes. Now transfer the entire mixture into a blender and puree this on high until you have a smooth sauce.
  • Now pour back the sauce into the pan and cook it over medium heat.
  • Skin the coconut cream on its well combined, and add in some salt to season.
  • Now take the drained pasta and add it into the pan, and stir well to combine.
  • Add in the cut sausages and the fresh basil leaves. Please give it a good stir and serve it hot.

Recipe for Creamy Cauliflower Alfredo Fettuccine

The list of ingredients are:

  • One pound of gluten-free pasta – fettuccine
  • Cauliflower Alfredo Sauce
  • Three cups of chopped cauliflower florets
  • One cup of water
  • Two tablespoons olive oil
  • Salt to season
  • Five slices thick-cut bacon,
  • Half a yellow onion, finely diced
  • Finely diced chives or flat-leaf parsley

The instructions are:

  • Take a medium pot of water and bring to a boil.
  • Simmer the water and add in the cauliflower florets for 10 minutes or until the cauliflower is tender.
  • Add the cauliflower and some liquid into the jar of a blender and add two tablespoons of olive oil.
  • Puree this into a smooth and creamy consistency—season to taste with salt and set it aside.
  • Now, add the bacon to a large sauté pan and cook over medium-high heat.
  • Add in the onions and cook them in the bacon fat for about 7 more minutes.
  • While the bacon is cooking, bring a pot of salted water to a boil and cook the pasta to al dente according to instructions on the package.
  • Drain the pasta and reserve 1 cup of pasta water.
  • Add the pasta to the bacon and onions, and then add the alfredo sauce made of cauliflower as well.
  • Mix everything well, and serve hot.
